Ingredients:
Self-raising flour - 1 1/2 cups
Nutmeg - 1/4 tsp
Pumpkin - 1/2 cup (cooked, mashed & drained)
Mixed spice - 1/4 tsp
Milk - 1/2 cup
Brown sugar - 1/2 cup (firmly packed)
Salt - 1/2 teaspoon
Raisins - 1/2 cup
Egg - 1
Vegetable oil - 1/4 cup
Preparation:
1. Sift the flour, salt, nutmeg and spice into a bowl.
2. Stir in the sugar and sultanas.
3. Beat the egg, add the oil, pumpkin and milk and mix thoroughly.
4. Add to the dry ingredients and stir until thoroughly mixed.
5. Spoon into twelve well-greased. deep patty tins and bake in a moderately oven for
eighteen to twenty minutes. or until cooked.
6. Serve fresh with whipped cream, if preferred.
